Heat oil in a fry pan and cook fennel seeds, garlic and mushrooms for a few minutes or until mushrooms are begininning to soften. Add bean sprouts and toss for a minute then remove from heat.

In a bowl toss mushroom mixture with spinach and top with goat's cheese and parsley. Season with salt & pepper to serve.
