Bring 3/4 of a cup of water to the boil and add brown rice, cover and simmer for 15 minutes. Drain, set aside and season with salt and pepper.

Heat oil in a fry pan over medium-high heat, add garlic, lemon zest and chicken pieces and cook for a few minutes until just cooked. Set chicken aside, season with salt & pepper and cover loosely with foil for 5 minutes.

In same frypan add broccoli and shredded kale to the flavoured oil and cook for a few minutes.

Place brown rice in bowl, add chicken, vegetables and spring onions. Season with salt and pepper and serve with a squeeze of lemon juice and tzatziki.
