Ingredients
- 1 tbs lemon juice
- 2 tsp extra virgin olive oil
- 1 garlic clove, crushed
- salt & pepper, to taste
- 185g tin tuna in oil, drained
- 1 red onion, finely diced
- 400g tin cannellini beans, drained & rinsed
- 1 Lebanese cucumber, roughly chopped
- 2 roma tomatoes, cut in wedges
- 1/2 cup fresh parsley, roughly chopped
Directions
Whisk together lemon juice, oil, garlic and salt and pepper in a small bowl.
Gently combine tuna, onion, beans, cucumber, tomatoes and parsley in a bowl and pour over dressing to serve.
