Heat a small frypan over medium heat and cook tofu over medium heat for three minutes on each side. Remove from pan and add tamari to the tofu.
Sprialize or finely shred zucchini and carrot and add to a serving bowl with cabbage, capsicum and beans.
Whisk dressing ingredients in a small bowl, add water if required to make it a thinner consistency.
Toss through tofu and tamari with the salad ingredients, add dressing to your taste and top with coriander, mint and pumpkin seeds.
