Preheat oven to 200°C and line a baking tray with baking paper.
In a large bowl combine the miso, maple syrup and vinegar; add sweet potato and red onion and toss well.
Reserving liquid, place sweet potato and red onion onto the baking tray and into the oven for 20 minutes or until cooked.
To the reserved liquid add the chilli powder, ½ the cumin, paprika, sea salt, tamari and walnuts and toss to coat.
Add walnuts to baking tray and bake for five minutes.
In a small bowl, combine the yoghurt with the remaining cumin.
Taking a lettuce cup, add sweet potato, onion and walnuts; top with cherry tomatoes, avocado, cumin yoghurt and coriander and enjoy.
