Preheat oven to 170°C.
Whisk three eggs in a bowl until well combined and set aside.
Heat a small fry pan over a medium heat and the oil. Sauté the bacon (if in your ingredients) until crispy. Add the greens and tomato until softened.
Pour the egg mixture over the vegetables and once starting to set, transfer to the oven until cooked to your liking. Carefully remove fry pan from the oven using oven mitts and transfer onto a plate. Season well before serving.
