Spinach & Feta Quesadilla with Corn Salsa

Scatter one tortilla with spinach leaves, feta cheese and season with salt and pepper, then top with other tortilla.

Heat a non-stick frypan with oil over medium heat then gently place tortilla in the pan and cook for 1-2 minutes or until it becomes crisp. Flip and cook the other side.

Serve with salsa of tossed tomato, avocado, corn and vinegar seasoned with salt and pepper.
