Place the spinach in a bowl. Meanwhile bring a saucepan of salted water to the boil.

Blanche, broccolini, beans and asparagus for 2 minutes. Drain well and tip into the bowl with the spinach.

Heat a small non stick fry pan with oil over medium heat.

Add eggs to hot pan. They should sizzle slightly, using a spatula gently make a figure 8 in the eggs, so the uncooked egg runs to the side of the pan and cooks.

After 2 minutes add the green vegetables to one side of the omelette. Remove from heat, sprinkle over feta and season with salt and pepper.

Fold in half to serve.
