Heat the oil in a large pot over medium-high heat. Add the bacon and cook for a few minutes until crisp, then set aside 1 tbs for topping.

Add leek and garlic to bacon and cook for 2-3 minutes or until the leek has softened.

Add sweet potato, celery and corn to the pot, season with salt and pepper and cook for a few minutes or until the sweet potato has started to soften.

Turn the heat down to medium and add the stock, milk and bay leaf into the pot, simmer for 10 minutes or until the vegetables have cooked through.

Add the seafood and simmer for a further 3-5 minutes or until the seafood has cooked.

Serve chowder sprinkled with reserved bacon bits and chives.
