Satay Chicken Skewers

Preheat grill.

To make satay sauce, heat oil in a small saucepan over medium heat. Add shallot, garlic and ginger and cook for a few minutes. Add remaining sauce ingredients with 1/4 cup water and continue to cook for a few more minutes until well combined.

Cut chicken into 2cm cubes and thread onto skewers. Spray with oil, season with salt and pepper and grill for a 5-8 minutes each side, or until cooked and golden.

Set aside and rest for a few minutes. Serve drizzled with satay sauce.
