Raw Pad Thai Salad with Chicken

Bring a small pot of water to the boil over high heat.

Place the chicken tenderloins in the boiling water and turn off the heat. Cover and let sit for 10 minutes.

Meanwhile prepare the salad ingredients. Using a spiraliser or mandolin finely shred the salad ingredients into a large bowl.

Using a small saucepan toast sesame seeds over medium heat, then set aside to use for garnishing.

Using the same saucepan, place in all the dressing ingredients and warm through over low heat until combined. Add a tablespoon of hot water to thin the dressing if too thick.

Pour the dressing over the salad and toss through so all ingredients are coated. Garnish with sesame seeds.
