Heat oil in a frypan over medium heat. Saute capsicum and onion for 5 minutes.
Add garlic, paprika and rice and cook for a few more minutes.
Add tomatoes and stock and continue to cook for about 15 minutes (don't stir) or until all the liquid has been absorbed and rice is tender.
Add seafood and peas for a few minutes more until cooked and heated through. Adjust seasonings.
Squeeze over lemon and scatter with parsley to serve.
