Pumpkin Fritters with Poached Eggs

To a large bowl, add grated pumpkin, feta, flour, mint, coriander and chilli flakes.

In a separate bowl, whisk two eggs and add to the above mixture. Combine well.

Form medium-sized balls, moulding each well with your hands. Mixture should make approximately six fritters.

Heat oil in a frypan, flatten the fritters and shallow fry until golden brown, about one to two minutes each side. Repeat for additional fritters.

Serve fritters with a poached or boiled egg on top.
