To a large bowl, add grated pumpkin, feta, coconut flour, psyllium, coriander and chilli flakes.
In a separate bowl, whisk eggs and add to the above mixture. Combine well.
Form medium-sized balls, molding each well with your hands. Mixture should make around 6 fritters.
Heat coconut oil in a frypan, flatten the fritters and shallow fry until golden brown, about 1-2 minutes, flipping half way. Repeat for additional fritters.
Serve fritters with 2 poached or boiled eggs per serve.
