One Pan Pork Chops with Brussel Sprouts

Preheat oven to 180 C.

In a bowl combine brussel sprouts, green beans, 1 tbs of oil, mustard, salt and pepper, and toss until well coated. Season chops with salt and pepper.

In an oven proof frypan, heat the remaining oil over a medium-high heat, add the garlic, sage leaves, brussel sprouts and beans, cook for 2-3 minutes or until slightly browned, stirring constantly.

Move vegetables to the side to make room for the pork. Seal pork chops on each side (2 mins each side).

Place pan in the oven for 12-15 minutes or until chops are cooked through and sprouts and beans are soft.

Remove pan from oven and serve sprinkled with fresh parsley.
