Preheat oven to 160ºC and line one large baking tray with baking paper.
In a large bowl, combined cashews, almonds, pepitas, pecans, vanilla, coconut oil, maple syrup and salt until evenly coated.
Spread the mixture out onto the lined tray evenly.
Bake for 20 minutes, stirring every five minutes with a wooden spoon until evenly golden brown.
Allow the nuts to cool completely and then add the chopped dates.
Keep in an airtight container for up to one month.
