Mushroom, Spinach & Asparagus Omelette

Heat a non-stick frypan over medium heat. Heat oil and sauté mushrooms, spinach and asparagus.

Whisk together eggs with 2 tablespoons water and pour into pan and cook for a few minutes until egg starts to set.

Add mushrooms, spinach and asparagus. Sprinkle with cheese and parsley, fold in half and season before serving.
