Heat oil in a medium-sized saucepan over medium heat, add onion and garlic. Cook until onion softens.
Add stock, tinned tomatoes, sweet potato, carrot, kale, rosemary and bay leaves and bring to the boil.
Let simmer for 10 minutes or until sweet potato and carrot have softened. Add kale, tomatoes and beans and simmer for another 3 minutes.
Add peas and return to the boil for a few minutes.
Season to taste and serve sprinkled with parmesan.
