- 1/2 corn cob steamed and kernels removed
- 6 cherry tomato cut in halves
- 1/4 avocado diced
- 1 lebanese cucumber cut into chunks
- 20 g baby spinach leaves
- 1/4 cup(s) fresh coriander roughly chopped
- 20 g feta cheese
- 1 lime juiced
- Salt & pepper to taste
Combine all ingredients in a bowl.
Drizzle with lime juice and season with salt and pepper to serve.
