In a large bowl, mix together all meatball ingredients (except the oil). Using a dessert spoon shape into balls.
Heat the oil in a large fry pan and fry meatballs over medium heat for around four minutes, turning every few minutes. Set aside.
Heat the remaining oil in the fry pan and sauté the garlic for one minute. Add bok choy stems and broccolini and cook for three minutes. Add bok choy and silver beet leaves together with a tablespoon of water and cook for a further three to four minutes or until leaves have wilted. Season to taste.
To make the honey mustard sauce, place all ingredients in a medium bowl and whisk until all combined.
Serve the meatballs with the greens and the dressing on the side.
