Lemon Grilled Fish with Artichoke, Almonds & Peas

Heat 2 tsp of olive oil in a saucepan, add almonds and cook tossing for a couple of minutes. Add garlic, then artichokes and peas, cover and simmer for a few minutes to warm through. Set aside and keep warm.

Heat a frypan over medium-high heat until hot.

Rub fish with remaining oil, season with thyme, salt and pepper and cook for 1-3 minutes on each side, depending on the thickness.

Toss vegetables with lemon juice and parsley and serve with fish with a squeeze of lemon.
