Lamb Souvlaki

Dice lamb into 3cm cubes and toss with oil, lemon zest, garlic and oregano in a bowl or plastic bag. Set aside for 10 minutes. Thread lamb onto two skewers.

Heat BBQ or grill over high heat and cook lamb for about 3 minutes each side and set aside to rest.

Warm bread on BBQ for a couple of minutes. Top with tzatziki, tomatoes, onion, lettuce, lamb, a squeeze of lemon and season with salt and pepper to serve.
