Preheat oven to 200°C and line a large baking tray with baking paper.
Combine mushroom, zucchini and onion in a bowl with oil, garlic, spices, salt and pepper, then spread on baking tray. Bake for 15 minutes, add tomatoes and cook for another 5 minutes.
Heat tortillas for a few minutes in the oven. Mash avocado with 2 tsp of lime juice and spread on warm tortillas.
Add roasted vegetables, 1 tsp lime juice, cheese and coriander to serve.
