Grilled Turkey & Sauteed Vegetables

Rub turkey fillets with 1/2 tsp oil and season with 1/2 tsp thyme, salt and pepper.

Heat a grill pan or BBQ over high heat and grill turkey fillets for 3-4 minutes each side or until cooked.

Add potatoes to a medium sized saucepan of cold salted water and bring to the boil. Simmer gently for 5 minutes, add broccoli florets and continue to cook for another minute. Add beans and cook for one minute more. Drain immediately.

Heat remaining oil, thyme, olives and garlic over medium heat, then toss through drained potatoes and beans and saute for a few minutes.

Squeeze lemon juice over turkey and vegetables to serve.
