Preheat oven to 190°C.

Heat oil in a fry pan suitable for the oven and saute leek, garlic, cumin and finely chopped chilli for 5 minutes over low heat. Adjust seasoning and stir through spinach until wilted.

Make four holes in the greens for the eggs, sprinkle with feta and bake for 8-10 minutes or until eggs are cooked.

Scatter over remaining sliced chilli and dukkah to serve.
