Ingredients
- 10 g baby spinach leaves
- 10 g rocket
- 100 g tinned chickpeas rinsed and drained
- 1/4 pink grapefruit peeled and cut into cubes
- 30 g goat’s feta crumbled
- INGREDIENTS FOR DRESSING
- 1/2 teaspoon dijon mustard
- 1 teaspoon lemon juice
- 1 teaspoon olive oil
- Salt & pepper to taste
Directions
Fill a large bowl with salad ingredients and combine well.
Toss with dressing just before serving. Can be transported in a jar if required.
