Preheat oven to 180°C and grease a quiche dish with 1 tsp coconut oil.
Combine meal, flour, baking powder and salt in a medium sized bowl.
Stir through the eggs and oil.
Combine the mixture thoroughly with your hands and carefully press into prepared dish. A little TLC goes a long way with this, so take your time to spread the "dough" evenly over the base and sides of your dish.
Cook for 10 minutes or until lightly golden.
To make the filling, beat the remaining eggs and season with salt and pepper.
Arrange vegetables evenly over pastry base, gently pour over beaten eggs and bake for another 20 minutes or until set. This will be dependant on your oven so please allow more time should it be necessary.
Meanwhile, toss feta with cucumber, vinegar and oregano. Season with salt & pepper.
Cool quiche before slicing and serve with salad. Enjoy!
