To poach egg: bring a small saucepan of water to the boil and add vinegar. Crack egg into a cup and create a gentle whirlpool in the water. Slowly tip the egg/s into the water, white first and cook for three minutes. Remove with a slotted spoon and drain on kitchen paper.
In a small bowl mash avocado, feta and lemon juice.
Heat coconut oil in a frypan and cook tomatoes until soft.
Toast bread and spread with avocado mash. Top with egg and tomato and season with salt and pepper to serve.
