In a large bowl beat eggs. Chop broccolini into 3cm pieces, add into the egg mixture along with mushrooms and bacon.
Lightly oil a non-stick frypan, pour in egg mix and cook until eggs are to your liking.
Sprinkle feta and add kale to one half of the omelette and gently fold in half. Cook for another 2 minutes.
Serve omelette with mashed avocado and season with salt and pepper to taste.
