Preheat oven to 180ºC.

Lightly grease a mini muffin tray or line with mini muffin patty cake cases.

Into a large mixing bowl add all ingredients including the grated zucchini and mix until well combined.

Spoon mixture into muffin tray and bake for 10 minutes or until cooked.

Muffins will keep in the fridge for five days, or in the freezer for up to two months.
