Preheat oven to 200°C and line the base with baking paper. Add onion, fennel, orange and top with chicken and scatter over oil and thyme leaves. Season with salt and pepper and bake for 20-30 minutes or until chicken is cooked.
Meanwhile cook cauliflower in a saucepan of salted water for 10 minutes, reserving some of the water. Drain and mash with butter and some of the cooking water, if needed. Season with salt and pepper and stir through chopped fennel fronds.
Toss chicken, vegetables and juices well and serve on top of cauliflower mash.
