Breakfast Burrito with Avocado

Preheat oven to 100°C.

In a small bowl whisk together the eggs and chives. Season to taste.

Heat oil in a small frying pan over a medium heat and add egg mixture. Cook for a few minutes, gently pushing mixture in from edges until egg has scrambled.

Warm tortilla in the oven for two minutes.

Lay warm tortilla flat, top with spinach, eggs and mashed avocado and season well. Wrap tortilla and enjoy. Why not toast it in a sandwich press for some extra crunch!
