Heat oil over low heat in a large saucepan and saute onion, garlic, curry powder, mustard, chopped stems of coriander and lemon zest for a few minutes.
Turn heat to high and stir through chicken, potatoes and lentils for a few minutes. Add stock, bring to a simmer and cook covered for 20 minutes, or until cooked. (You may need to cook uncovered for a few minutes to reduce liquid.)
