Heat a large saucepan over medium heat and add 1 tsp sesame oil, garlic, ginger and half of the spring onion and cook for 1 minute.
Add beef stock, soy sauce and miso paste to saucepan and bring to a gentle simmer. Add noodles and pak choy to the saucepan, cover and remove from heat. Let the noodles stand in the pot for 5-7 minutes or until cooked.
While the noodles are cooking, heat a wok or non-stick frypan, add remaining oil, hoisin and beef, stir fry until just cooked (about 1 minute). Remove from pan and set aside.
Divide noodles and pak choy between 2 bowls, top with beef and remaining spring onions to serve.
