Baked Salmon with Cauliflower Fried Rice

Preheat oven to 200°C and line a baking tray with baking paper. Combine miso and mirin, rub into salmon and bake skin side down for 15 minutes.

Meanwhile, cut cauliflower florets from stems and grate or blitz in a food processor to form a 'rice' and set aside.

Heat oil in a fry pan over high heat and cook mushrooms, uncovered for 5 minutes. Add cauliflower and garlic and continue to cook for another 5 mintues. Stir through soy, warm through and adjust seasoning.

Serve cauliflower rice topped with salmon, lemon juice and scatter over spring onions.
