Baked Fish with Tahini

Preheat oven to 200°C.

Take two pieces of foil, large enough to wrap each piece of fish and line with a square piece of baking paper.

Place the fish, skin side down on the baking paper. Drizzle with oil and season well.

Wrap fish in foil and seal and place on a tray and into the oven for approximately 10 minutes. If you take the fish out and it is still not cooked to your liking, simple re-seal the foil and place back in the oven for a few extra minutes.

To make the tahini dressing, add all ingredients in a bowl and whisk well to combine. If you would like the consistency to be thinner slowly add additional water.

To serve, mix the rocket, cherry tomatoes, mixed herbs, flaked almonds and avocado together and place on two plates. Place the fish on top of the salad and drizzle with the tahini dressing to taste.
