Bacon and Egg Burritos

In a frying pan, cook bacon over medium heat then remove from pan.

In a large bowl, whisk together eggs, cherry tomatoes, chopped onion. Pour mixture into pan and cook for two minutes. Once cooked, flip to the other side to finish cooking.

Lay the two wraps flat and spread half the yoghurt and Dijon dressing onto each wrap.

Fill each with a rasher of bacon and half the egg mixture. Top with spinach and coriander.

To finish, season with salt and pepper.

Serve immediately.
